Spiced Cauliflower Soup is a creamy, comforting soup infused with warm spices like cumin, turmeric, and coriander. Naturally gluten-free and easily made vegan, it’s a nourishing, flavorful dish perfect for cozy nights or elegant starters.

Ingredients

  • 2 tbsp olive oil or coconut oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 medium head cauliflower, chopped into florets
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground turmeric
  • ½ tsp smoked paprika (optional)
  • 4 cups vegetable broth
  • ½ cup coconut milk or cream (optional)
  • Salt and black pepper to taste
  • 1 tbsp lemon juice
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in garlic and ginger; cook for 1 minute until fragrant.
  3. Add cauliflower florets, cumin, coriander, turmeric, and paprika. Stir to coat well.
  4. Pour in vegetable broth. Bring to a simmer, cover, and cook for 15–20 minutes until cauliflower is tender.
  5. Remove from heat and blend the soup until smooth using an immersion blender or regular blender in batches.
  6. Stir in coconut milk (if using), lemon juice, salt, and pepper. Simmer for 5 more minutes to blend flavors.
  7. Serve hot, garnished with fresh herbs and a drizzle of coconut milk or olive oil if desired.
