Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves (optional)
  • 1 1/2 cups unsweetened applesauce
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts, raisins, or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix together the applesauce, brown sugar, eggs, oil, and vanilla until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in any optional mix-ins like nuts, raisins, or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For muffins: divide the batter into a muffin tin and bake for 18–22 minutes.
  • Store leftovers tightly wrapped at room temperature for up to 3 days, or freeze for up to 3 months.
  • Try drizzling with a maple glaze or serving with butter or cream cheese.
