Ingredients

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, combine the yellow cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the milk and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Spoon the batter evenly into the mini muffin tin, filling each cup about ¾ of the way.
