Ingredients

2 large boneless, skinless chicken breasts

½ cup all-purpose flour

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon garlic powder

¼ teaspoon cayenne pepper (optional)

½ teaspoon salt

½ teaspoon ground black pepper

3 tablespoons olive oil

2 tablespoons unsalted butter

1 large onion, thinly sliced

1 cup low-sodium chicken broth

⅓ cup heavy cream

Chopped fresh parsley, for garnish

Instructions

  • Slice each chicken breast horizontally to make 4 thin cutlets.

  • In a shallow bowl, mix flour, Italian seasoning, paprika, onion powder, garlic powder, cayenne (if using), salt, and pepper.

  • Dredge chicken cutlets in the seasoned flour, shaking off excess.

  • Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.

  • Add butter to the same skillet. Once melted, sauté onions until soft and golden (about 5 minutes).

  • Sprinkle in 2 tablespoons of the seasoned flour and stir to coat the onions.

  • Slowly add chicken broth while stirring, letting the sauce thicken slightly (2–3 minutes).

  • Stir in heavy cream, then return chicken to the skillet. Simmer for 5–7 minutes, spooning sauce over chicken until thickened and heated through.

  • Garnish with chopped parsley and serve

Notes

  • Add sliced mushrooms for extra depth.

  • Use chicken thighs for a juicier alternative.

  • Make it cheesy by adding Parmesan or mozzarella to the sauce.

  • For more spice, increase cayenne or add chili flakes.

  • Serve with mashed potatoes, pasta, rice, or roasted veggies.
