Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then brown on both sides (4-5 minutes per side). Remove and set aside.
  3. Sauté Vegetables: In the same skillet, sauté chopped onion and garlic until translucent (about 3 minutes). Add mushrooms and broccoli, cooking for another 5 minutes.
  4. Cook the Rice: Stir in rice and cook for 2 minutes to absorb flavors. Pour in chicken broth and heavy cream, stirring well.
  5. Smother the Chicken: Return browned chicken breasts to the skillet, covering them with the rice mixture.
  6. Bake: Transfer skillet to the oven and bake for 25-30 minutes, until chicken is cooked through and rice is tender.
  7. Garnish and Serve: Sprinkle with fresh parsley before serving.

Notes

  • Vegetable Variations: Try adding bell peppers, peas, or carrots for extra flavor.
  • Protein Options: Substitute chicken breasts with chicken thighs for a richer taste.
  • Rice Substitutions: Jasmine or basmati rice can be used, but adjust liquid and cooking time accordingly.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
