Smoked Sausage Pasta is a rich and flavorful one-pan dish featuring smoky sausage, tender pasta, and a creamy, slightly spicy sauce. It’s quick to prepare and perfect for weeknight dinners or comforting family meals.

Ingredients

  1. 12 oz smoked sausage (such as kielbasa or andouille), sliced
  2. 8 oz pasta (penne, rotini, or your favorite shape)
  3. 1 tbsp olive oil
  4. 1 small onion, diced
  5. 2 cloves garlic, minced
  6. 1 can (14.5 oz) diced tomatoes
  7. 1/2 cup chicken broth
  8. 1/2 cup heavy cream or half-and-half
  9. 1 cup shredded cheddar or Parmesan cheese
  10. 1/2 tsp salt (or to taste)
  11. 1/4 tsp black pepper
  12. 1/4 tsp red pepper flakes (optional)
  13. Fresh parsley, chopped (optional, for garnish)

Instructions

Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

  1. In a large skillet, heat olive oil over medium heat. Add sliced smoked sausage and cook until browned, about 4–5 minutes.
  2. Add diced onion and garlic. Sauté until softened and fragrant, about 2–3 minutes.
  3. Stir in diced tomatoes and chicken broth. Let simmer for 5 minutes.
  4. Add heavy cream and bring to a gentle simmer.
  5. Stir in cooked pasta and shredded cheese. Mix until combined and the cheese is melted.
  6. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  7. Season with salt, pepper, and red pepper flakes to taste.
  8. Garnish with chopped parsley and serve hot.

Notes

  1. Use gluten-free pasta for a gluten-free option.
  2. For added veggies, toss in bell peppers, spinach, or mushrooms.
  3. Spicy andouille sausage adds extra heat and flavor.
  4. Sour cream or cream cheese can be substituted for heavy cream.
  5. Reheat with a splash of broth or milk to refresh the sauce.
