A rich, creamy, and smoky Smoked Gouda & Cheddar Cheese Dip made with a blend of flavorful cheeses and warm spices. Perfectly smooth and melty, it’s an irresistible appetizer for parties, game days, or cozy nights in.

Ingredients

  • 1 cup smoked gouda cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1 cup milk or heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons chopped green onions or chives (optional for garnish)

Instructions

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1 minute to form a roux.
  3. Gradually whisk in the milk or cream until the mixture thickens and becomes smooth.
  4. Reduce heat to low and add the cream cheese, stirring until melted.
  5. Gradually stir in the smoked gouda and cheddar cheeses until fully melted and smooth.
  6. Season with garlic powder, onion powder, paprika (if using), salt, and pepper.
  7. Taste and adjust seasoning as desired.
  8. Transfer to a serving bowl or slow cooker set to “warm.”
  9. Garnish with chopped green onions or chives and serve warm with chips, bread, or vegetables.

Notes

  • Use freshly shredded cheese for the smoothest, creamiest texture.
  • Keep warm in a slow cooker during parties for easy serving.
  • Add a splash of milk if the dip thickens upon standing.
  • For a smoky-sweet flavor, stir in a spoonful of BBQ sauce.
  • Do not freeze, as the cheese may separate upon thawing.
