This Slow Cooker Sweet Potato Soup is creamy, comforting, and made with wholesome ingredients like sweet potatoes, carrots, and warm spices. It’s vegan, gluten-free, and perfect for cozy weeknights or meal prep.

Ingredients

  • 4 large sweet potatoes, peeled and chopped
  • 3 large carrots, peeled and chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or any plant-based milk)
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil (optional, for sautéing)

Instructions

  1. Peel and chop the sweet potatoes, carrots, and onion. Mince the garlic.
  2. Optional: Heat olive oil in a skillet over medium heat and sauté the onion and garlic until fragrant.
  3. Add all the ingredients (except the coconut milk) to the slow cooker.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth, or transfer it in batches to a blender.
  6. Stir in the coconut milk and adjust salt and pepper to taste.
  7. Serve warm and enjoy.
