A cozy and hearty slow cooker meal made with smoked sausage, tender cabbage, and vegetables simmered in a savory broth. Perfect for busy days and cold nights.

Ingredients

  • 1 lb smoked sausage (such as kielbasa), sliced
  • 1 medium green cabbage, cored and chopped
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 tbsp olive oil or butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Heat olive oil or butter in a skillet over medium heat. Brown the sliced smoked sausage for 3–4 minutes. This step is optional but adds flavor.
  2. In the bottom of a slow cooker, layer the chopped cabbage, carrots, onion, and garlic.
  3. Place the browned sausage on top of the vegetables.
  4. Pour in the broth until it covers about two-thirds of the mixture.
  5. Season with salt, pepper, paprika, and red pepper flakes if using.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours, until cabbage is tender and flavors are well combined.
  7. Stir before serving, adjust seasoning if needed, and serve hot.

Notes

  • Add potatoes for a more filling, stew-like texture.
  • Use spicy andouille sausage for added heat.
  • For a sweeter twist, add chopped apple in the last hour of cooking.
  • This recipe freezes well and is ideal for meal prep.
  • Substitute red cabbage for a slightly different flavor and color.
