Ingredients

  • 2 pounds beef sirloin or flank steak, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper

Instructions

  1. Slice the beef into thin strips against the grain for maximum tenderness.
  2. Place the sliced beef in the slow cooker.
  3. Add the sliced bell peppers, onion, and minced garlic over the beef.
  4. In a small bowl, whisk together soy sauce, beef broth, brown sugar, ground ginger, and black pepper.
  5. Pour the sauce mixture evenly over the ingredients in the slow cooker.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender.
  7. About 30 minutes before serving, mix cornstarch with 2 tablespoons cold water to create a slurry. Stir it into the slow cooker to thicken the sauce.
  8. Cover and continue cooking until the sauce has thickened.
  9. Taste and adjust seasoning if needed.
  10. Serve hot over rice or noodles.
