Slow Cooker Korean Beef is a savory and slightly sweet dish made with tender shredded beef simmered slowly in a flavorful sauce of soy sauce, garlic, ginger, and brown sugar. The slow cooking process creates juicy beef coated in a rich sauce that pairs perfectly with rice and fresh toppings.

Ingredients

  • 2 lbs beef chuck roast
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds
  • 3 cups cooked rice for serving

Instructions

  1. Place the beef chuck roast into the slow cooker.
  2. In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, beef broth, sesame oil, and rice vinegar.
  3. Pour the sauce over the beef in the slow cooker.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is very tender.
  5. Remove the beef and shred it with two forks.
  6. Return the shredded beef to the slow cooker and mix it into the sauce.
  7. In a small bowl, mix cornstarch and water to form a slurry.
  8. Stir the slurry into the slow cooker and cook for another 10–15 minutes until the sauce thickens.
  9. Serve the beef over cooked rice.
  10. Garnish with sliced green onions and sesame seeds.

Notes

  • Add red pepper flakes or gochujang for a spicy version.
  • Vegetables like broccoli, carrots, or bell peppers can be added during the last hour of cooking.
  • This dish also works well in lettuce wraps or served over noodles.
