Ingredients

  1. 2.53 lbs bone-in or boneless chicken thighs or breasts
  2. 2 tbsp olive oil
  3. 1/4 cup fresh lemon juice
  4. 1 tbsp lemon zest
  5. 4 garlic cloves, minced
  6. 1 1/2 tsp dried oregano
  7. 1/2 tsp dried thyme or rosemary
  8. 1 tsp salt
  9. 1/2 tsp black pepper
  10. 1/2 cup chicken broth or white wine
  11. Optional: 1 small red onion, sliced
  12. Optional: 1 lb baby potatoes, halved
  13. Optional: chopped fresh parsley or dill, for garnish
  14. Lemon wedges, for serving

Instructions

In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.

  1. Place chicken in the slow cooker and pour the lemon-herb mixture over it.
  2. Add chicken broth or white wine to the bottom of the cooker.
  3. If using, scatter sliced onion and baby potatoes around the chicken.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
  5. Optional: Transfer cooked chicken to a baking sheet and broil for 2–3 minutes to crisp the skin.
  6. Garnish with fresh herbs and serve with lemon wedges.

  1. Use bone-in thighs for maximum flavor and juiciness.
  2. Fresh lemon juice is best, but bottled can work in a pinch.
