A creamy, comforting slow cooker pasta dish featuring tender shredded chicken in a cheesy garlic-Parmesan sauce, tossed with your favorite pasta. Perfect for easy family dinners or meal prep.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 (8 oz) block cream cheese
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream or milk
  • 12 oz pasta (penne, rotini, or preferred shape)
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Place chicken in the slow cooker. Add garlic, Italian seasoning, salt, pepper, cream cheese, and chicken broth.
  2. Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is cooked through and tender.
  3. Shred chicken directly in the slow cooker using two forks.
  4. Stir in Parmesan cheese and heavy cream (or milk) until sauce is smooth and creamy.
  5. Cook pasta separately according to package instructions until al dente. Drain.
  6. Add cooked pasta to the slow cooker and stir to combine.
  7. Let sit for 5–10 minutes on warm setting to thicken and absorb flavors.
  8. Garnish with fresh parsley if desired and serve hot.
