Ingredients

  • 2 lbs chicken breasts
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 12 oz fettuccine or penne pasta
  • 1 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with Cajun seasoning, salt, and pepper.
  2. In a slow cooker, add the seasoned chicken, minced garlic, heavy cream, and chicken broth.
  3. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is tender and fully cooked.
  4. Remove the chicken from the slow cooker, shred or slice it, and set aside.
  5. Stir in the cream cheese and Parmesan cheese into the sauce until smooth and creamy.
  6. Meanwhile, cook the pasta according to package directions until al dente. Drain well.
  7. Add the cooked pasta and shredded chicken back to the slow cooker, stirring to coat everything evenly in the sauce.
  8. Let it sit for 10–15 minutes on the warm setting to allow the sauce to thicken slightly and the flavors to meld.
  9. Garnish with chopped parsley before serving.
