Slow Cooker Beef is a comforting and hearty dish made with tender beef slowly cooked alongside vegetables, herbs, and a savory broth. The slow cooking process allows the beef to become melt-in-your-mouth soft while absorbing rich flavors from the sauce. This simple recipe is perfect for busy days and creates a satisfying meal that pairs well with mashed potatoes, rice, or crusty bread.

Ingredients

  • 23 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 medium potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef chuck roast on all sides, then transfer it to the slow cooker.
  3. Add the chopped onion, garlic, carrots, and potatoes around the beef.
  4. In a bowl, mix together beef broth, Worcestershire sauce, tomato paste, thyme, salt, and black pepper.
  5. Pour the mixture over the beef and vegetables.
  6. Add the bay leaves.
  7. Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef becomes very tender.
  8. Remove the beef and shred or slice it as desired.
  9. Mix cornstarch with water to create a slurry.
  10. Stir the slurry into the slow cooker to thicken the sauce.
  11. Cook for an additional 10–15 minutes until the sauce thickens.
  12. Return the beef to the slow cooker and stir to coat with the sauce.
  13. Garnish with fresh parsley before serving.

Notes

  • Browning the beef before slow cooking adds extra flavor but can be skipped if needed.
  • Add mushrooms, celery, or green beans for additional vegetables.
  • Leftover shredded beef can be used in sandwiches, tacos, or wraps.
