Ingredients

  • 2 lbs beef tips or stew meat, cut into bite-sized pieces
  • 3 large potatoes, peeled and cubed
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil or butter
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil or butter in a skillet over medium-high heat. Sear the beef tips for 2–3 minutes per side until browned for added flavor.
  2. Transfer the beef to the slow cooker. Add potatoes, carrots, celery, onion, and garlic.
  3. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour the mixture over the beef and vegetables.
  4. Add the bay leaf, cover, and cook on low for 7–8 hours or high for 4–5 hours, until the beef is tender and vegetables are cooked through.
  5. For a thicker gravy, whisk cornstarch with 2 tablespoons of water and stir into the slow cooker during the last 30 minutes of cooking.
  6. Remove the bay leaf, taste, and adjust seasoning as needed. Garnish with fresh parsley before serving.
