Slow Cooker Beef Sirloin Tip Roast is a tender, flavorful, and effortless dish featuring a juicy roast slow-cooked with herbs, garlic, and savory broth. It’s the perfect comfort meal that practically cooks itself and delivers rich, melt-in-your-mouth flavor.

Ingredients

  • 1 (3–4 lb) beef sirloin tip roast
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tbsp cornstarch + 2 tbsp water (for slurry)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the roast dry with paper towels and season all sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until browned. Remove and set aside.
  3. Place chopped onions and minced garlic in the bottom of the slow cooker.
  4. Set the seared roast on top of the onions.
  5. Pour in beef broth, Worcestershire sauce, and soy sauce (if using). Add thyme, rosemary, and bay leaf.
  6. Cover and cook on low for 8–9 hours or on high for 4–5 hours, until the beef is fork-tender.
  7. Remove the roast and set aside to rest. Pour the liquid into a saucepan and bring to a simmer. Stir in the cornstarch slurry and cook until the gravy thickens.
  8. Slice or shred the roast, top with gravy, and garnish with parsley before serving.

  • Searing the roast adds a richer, caramelized flavor—don’t skip it if you can.
  • Add vegetables like carrots, potatoes, and celery for a complete one-pot meal.
  • Substitute red wine for part of the beef broth for a deeper flavor.
