Slow Cooker Beef Brisket is a rich, tender, and flavorful dish cooked low and slow until perfectly juicy. Infused with savory spices, barbecue sauce, and aromatic onions, this hearty meal is ideal for family dinners, gatherings, or easy meal prep with minimal hands-on effort.

Ingredients

  • 3 to 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Pat the brisket dry with paper towels and season generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the brisket on both sides for 3 to 4 minutes per side until browned.
  3. Place sliced onion and minced garlic in the bottom of the slow cooker.
  4. Lay the seared brisket on top of the onions.
  5. In a bowl, whisk together beef broth, barbecue sauce, Worcestershire sauce, brown sugar, tomato paste, smoked paprika, and dried thyme.
  6. Pour the sauce mixture over the brisket, ensuring it is well coated.
  7. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours, until fork-tender.
  8. Transfer brisket to a cutting board and let rest for 10 to 15 minutes before slicing against the grain.
  9. Spoon cooking juices over the sliced brisket before serving.

Notes

  • Searing adds extra depth of flavor but can be skipped if short on time.
  • Cook until fork-tender; brisket may need the full cooking time.
  • Add carrots and potatoes for a complete one-pot meal.
  • Store leftovers with cooking juices to maintain moisture.
  • Brisket freezes well for up to 3 months.
