A tender, flavorful slow-cooked chicken dish infused with the natural sweetness of applesauce, savory spices, and tangy vinegar. Perfect for sandwiches, tacos, or as a hearty main dish for any meal.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup unsweetened applesauce
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar or honey
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil or cooking spray (for greasing slow cooker)

Instructions

  1. Lightly grease the slow cooker with olive oil or cooking spray.
  2. Place the chicken in the bottom of the slow cooker.
  3. In a bowl, whisk together applesauce, onion, garlic, apple cider vinegar, brown sugar, Dijon mustard, smoked paprika, cinnamon, salt, and pepper.
  4. Pour the mixture over the chicken, coating it evenly.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shreds.
  6. Shred the chicken in the slow cooker and mix well with the sauce.
  7. Serve warm on buns, over rice, or with roasted vegetables.
