Ingredients

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 45 drops green food coloring

For the Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or heavy cream
  • Green food coloring
  • Shamrock sprinkles or green sugar (for decoration)

Instructions

  • Preheat the Oven – Set oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Mix Dry Ingredients – In a bowl, whisk together flour, baking powder, and salt.
  • Cream Butter and Sugar – In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and green food coloring.
  • Combine Wet and Dry – Gradually add dry ingredients, alternating with milk, mixing until smooth.
  • Bake – Divide batter into cupcake liners and bake for 18-20 minutes. Let cool completely.
  • Make the Frosting – Beat butter until creamy, then gradually mix in powdered sugar, vanilla, and milk. Add green food coloring to achieve the desired shade.
  • Decorate – Pipe or spread frosting onto cooled cupcakes. Top with sprinkles or arrange mini cupcakes into a shamrock shape.
