Simple French-Style Potato Salad is a light, elegant dish made with a mustard vinaigrette, fresh herbs, and tender potatoes. Free of mayo and full of flavor, it’s the perfect sophisticated side for any meal.

Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 shallots, finely minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh tarragon, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and let cool slightly.
  2. While still warm, cut the potatoes into bite-sized pieces and place them in a large bowl.
  3. In a small bowl, whisk together Dijon mustard, white wine vinegar, and olive oil to make the vinaigrette.
  4. Add the minced shallots to the vinaigrette and let them sit for a few minutes to mellow.
  5. Pour the vinaigrette over the warm potatoes and toss gently to coat evenly.
  6. Stir in the chopped parsley, chives, and tarragon (if using).
  7. Season with salt and black pepper to taste. Let sit for 10–15 minutes before serving to allow the flavors to meld.

  • Serve warm, at room temperature, or chilled—it’s delicious any way.
  • Letting the shallots sit in the vinaigrette helps reduce their sharpness.
  • Use fingerling potatoes or baby potatoes for variety and presentation.
  • Make ahead and refrigerate—just bring to room temp before serving.
