Ingredients

  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper, to taste

  • 2 cups cooked egg noodles or rice (optional, for serving)

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add the beef slices and cook for 2-3 minutes, until browned. Remove the beef from the skillet and set aside.
  • In the same skillet, add the chopped onion and garlic. Cook for 2-3 minutes until softened.
  • Add the sliced mushrooms and cook for another 5 minutes, until they release their moisture and become tender.
  • Stir in the beef broth and Dijon mustard. Bring to a simmer and cook for 5 minutes to reduce the sauce slightly.
  • Reduce the heat to low and stir in the sour cream. Mix until well combined and creamy.
  • Return the beef to the skillet and stir until evenly coated in the sauce. Cook for another 2-3 minutes to heat the beef through.
  • Season with salt and pepper to taste. Garnish with fresh parsley if desired.
