Shrimp scampi pasta is a fast and flavorful dish featuring tender shrimp in a buttery garlic-lemon sauce, tossed with pasta and finished with fresh herbs. It’s an elegant yet easy meal perfect for any occasion.

Ingredients

  • 12 oz pasta (linguine, spaghetti, or angel hair)
  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine (or chicken broth)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (plus more for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook pasta in salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  3. Add shrimp in a single layer, season with salt, pepper, and red pepper flakes. Cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Add white wine (or broth) and lemon juice to the skillet. Simmer for 2–3 minutes, scraping up any browned bits.
  5. Return shrimp to the pan along with the cooked pasta. Toss to combine, adding reserved pasta water as needed to loosen the sauce.
  6. Stir in lemon zest and chopped parsley. Adjust seasoning to taste.
  7. Serve immediately, topped with extra parsley and Parmesan if desired.

Notes

  • Use broth instead of wine for an alcohol-free version.
  • Don’t overcook shrimp—remove them as soon as they turn pink.
  • For a creamier texture, add a splash of cream or swirl in more butter at the end.
  • Can be made dairy-free using plant-based butter and omitting Parmesan.
