This Shrimp Scampi Pasta Bake combines the classic flavors of buttery garlic shrimp scampi with the comforting appeal of a cheesy baked pasta dish. Ingredients

For the Pasta Bake:

  • 12 oz (340 g) pasta (penne, rigatoni, or spaghetti)
  • lbs (680 g) medium raw shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  • Sauté Shrimp:
    • Heat 2 tablespoons of butter in a large skillet over medium heat.
    • Add minced garlic and sauté for 30 seconds until fragrant.
    • Add shrimp and cook for 2-3 minutes per side, until pink and opaque.
    • Remove shrimp from skillet and set aside.
  • Make the Sauce:
    • In the same skillet, melt the remaining 2 tablespoons of butter.
    • Pour in heavy cream and chicken broth, stirring to combine.
    • Bring to a gentle simmer.
    • Stir in lemon juice, lemon zest, and Parmesan cheese until the sauce is smooth.
    • Season with salt and black pepper to taste.
  • Combine Ingredients:
    • Add cooked pasta and shrimp to the skillet, tossing to coat evenly in the sauce.
    • Transfer the mixture to the prepared baking dish.
    • Sprinkle shredded mozzarella cheese evenly over the top.
  • Bake: Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish & Serve: Remove from oven and garnish with chopped fresh parsley. Serve warm.
