Fast, vibrant shrimp fajitas made with a zesty Cajun-lime marinade, tender shrimp, and sautéed peppers—perfect for a flavorful weeknight meal.

Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh lime juice
  • 1 tbsp Cajun spice
  • 1 tsp salt
  • 1 lb large shrimp, peeled and deveined
  • 2 cups sliced bell peppers
  • 1 cup sliced onion
  • 1/4 cup chopped cilantro
  • 1 tbsp lime juice (for topping)
  • 8 soft flour tortillas
  • 1 avocado, sliced
  • 2 lime wedges (for serving)

Instructions

  1. In a small bowl, whisk together olive oil, garlic, lime juice, Cajun spice, and salt to form a marinade.
  2. Toss sliced bell peppers and onions with half of the marinade in a medium bowl.
  3. Pat shrimp dry and coat with the remaining marinade.
  4. Heat a large pan over medium-high heat and cook the shrimp until pink and opaque. Remove and set aside.
  5. In the same pan, sauté the marinated vegetables until tender and slightly caramelized.
  6. Return shrimp to the pan, add cilantro and a splash of lime juice, and gently stir to combine.
  7. Serve the shrimp and vegetables in warmed tortillas with avocado slices and lime wedges.
