Shrewsbury biscuits are classic British cookies with a buttery, crisp, and melt-in-the-mouth texture. Lightly flavored with vanilla or lemon zest, they’re perfect for tea-time or gifting.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2/3 cup caster sugar (or fine granulated sugar)
  • 1 egg yolk
  • 1 tsp vanilla extract (or 1 tsp lemon zest)
  • 1/4 tsp salt
  • 12 tsp milk (optional, if needed to form dough)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. In a bowl, cream the butter and sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract or lemon zest. Mix until combined.
  4. Sift in the flour and salt. Mix to form a soft dough. Add milk if needed to bring it together.
  5. Wrap the dough in plastic wrap and chill for 20–30 minutes.
  6. Roll out the dough on a lightly floured surface to 1/4-inch thickness.
  7. Cut into rounds or desired shapes using a cookie cutter.
  8. Place on the baking tray and bake for 12–15 minutes or until edges are lightly golden.
  9. Cool on the tray for a few minutes, then transfer to a wire rack to cool completely.

  • Use lemon or orange zest for a fresh citrus twist.
  • Sprinkle coarse sugar on top before baking for extra crunch.
