Shredded Chicken Gyros are a quick and flavorful twist on the classic Greek gyro, featuring tender marinated chicken, fresh vegetables, and creamy tzatziki sauce wrapped in a warm pita.

Ingredients

  1. 1 lb chicken breast (or thighs)
    2 tbsp olive oil
    1 tbsp lemon juice
    2 tsp dried oregano
    1 tsp garlic powder
    1/2 tsp ground cumin
    Salt and pepper, to taste
    4 pita bread or flatbreads
    1 cucumber, thinly sliced
    1 tomato, diced
    1/2 red onion, thinly sliced
    Fresh parsley, chopped (for garnish)
    For Tzatziki Sauce:
    1/2 cup plain Greek yogurt
    1/4 cup cucumber, finely grated
    1 tbsp lemon juice
    1 clove garlic, minced
    1 tbsp olive oil
    Salt and pepper, to taste

Instructions

In a small bowl, mix olive oil, lemon juice, oregano, garlic powder, cumin, salt, and pepper to make the marinade.

  1. Place the chicken breasts in a resealable plastic bag or bowl and pour the marinade over the chicken. Let it marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).
  2. Preheat a grill or skillet over medium heat. Cook the chicken for 5-7 minutes per side until fully cooked and golden brown on the outside.
  3. Once the chicken is cooked, let it rest for a few minutes, then shred it using two forks or chop it into bite-sized pieces.
  4. While the chicken is cooking, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, lemon juice, minced garlic, olive oil, salt, and pepper in a bowl. Stir well and refrigerate until ready to use.
  5. Warm the pita or flatbreads in a dry skillet or microwave for a few seconds until soft and pliable.
  6. Assemble the gyros by placing a generous amount of shredded chicken on each pita. Top with cucumber, tomato, and red onion.
  7. Drizzle with the tzatziki sauce and garnish with fresh parsley.
  8. Roll up the pita around the fillings, and serve immediately.

  • For a spicy kick, add cayenne pepper or chili flakes to the marinade.
  • To make a vegetarian version, replace the chicken with grilled vegetables like eggplant, zucchini, or bell peppers.
