This Savory Spinach and Feta Breakfast Galette is a mouthwatering combination of flaky pastry, fresh spinach, and creamy feta cheese. Ingredients

  • 1 sheet of puff pastry (store-bought or homemade)

  • 2 cups fresh spinach, washed and chopped

  • 1/2 cup feta cheese, crumbled

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • 1 egg (for egg wash)

Instructions

  • Preheat your oven to 375°F (190°C).

  • In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 3-4 minutes until softened. Add the garlic and cook for another 1 minute, until fragrant.

  • Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Season with salt, pepper, and dried oregano. Remove from heat and set aside.

  • Roll out the puff pastry on a lightly floured surface to about 12 inches in diameter. Place it on a baking sheet lined with parchment paper.

  • Spoon the spinach mixture onto the center of the pastry, leaving about a 2-inch border around the edges.

  • Sprinkle crumbled feta cheese over the spinach mixture.

  • Fold the edges of the pastry over the filling, creating pleats around the galette.

  • Beat the egg and brush it over the exposed pastry edges for a golden finish.

  • Bake for 25-30 minutes, or until the pastry is golden brown and crispy.

  • Remove from the oven and let it cool slightly before slicing and serving.

Notes

  • If using frozen spinach, thaw it and squeeze out excess moisture before using.

  • For a vegan version, replace the puff pastry with a vegan option and use non-dairy cheese. Omit the egg wash or use a vegan egg wash
