Sautéed Garlic Green Beans are a crisp-tender, garlicky side dish that’s quick to prepare and perfect for everyday meals or special occasions.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 3 cloves garlic, minced or thinly sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes, 1 tablespoon lemon juice, 2 tablespoons toasted almonds

Instructions

  1. Bring a pot of salted water to a boil. Add green beans and blanch for 2–3 minutes until bright green and slightly tender.
  2. Drain and immediately transfer beans to an ice water bath to stop cooking. Drain again and pat dry.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30–60 seconds until fragrant but not browned.
  4. Add green beans and sauté for 4–5 minutes until tender-crisp, tossing to coat evenly.
  5. Season with salt and pepper to taste. Add optional red pepper flakes or lemon juice if desired.
  6. Serve hot or warm, garnished with toasted almonds if using.

Notes

  • Blanching keeps the green beans vibrant and crisp-tender.
  • Use fresh garlic for the best flavor.
  • Don’t overcook the garlic—it can burn quickly and turn bitter.
  • These green beans are best enjoyed fresh but can be prepped ahead.
