Sausage Rolls are a savory pastry snack made with seasoned sausage meat wrapped in golden, flaky puff pastry. Perfect for parties, picnics, or everyday snacks, they’re crispy on the outside and juicy on the inside.

Ingredients

  • 1 lb ground pork sausage or sausage meat
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup breadcrumbs
  • 1 tablespoon fresh parsley or thyme, chopped (optional)
  • Salt and pepper to taste
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Optional: mustard, ketchup, or chutney for serving

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix sausage meat, onion, garlic, breadcrumbs, herbs (if using), salt, and pepper until just combined.
  3. Roll out puff pastry on a lightly floured surface and cut each sheet into rectangles (approx. 4×6 inches).
  4. Spoon a line of sausage mixture along one long edge of each rectangle. Roll the pastry over the filling, seam side down, to enclose.
  5. Cut into desired lengths and place on the prepared baking sheet.
  6. Lightly score the tops for decoration and brush with beaten egg.
  7. Bake for 20–25 minutes, or until the pastry is golden and sausage is cooked through.
  8. Let cool slightly before serving. Serve with your favorite dipping sauces if desired.

Notes

  • Use cold pastry for best results—work quickly to keep it from softening.
  • Ensure sausage is fully cooked (internal temp 160°F/71°C).
  • Freeze unbaked rolls and bake from frozen, adding 5–10 extra minutes to cook time.
  • Use spicy sausage or herbs for extra flavor variety.
  • Brush with egg wash for golden, shiny tops.
