Sausage Lentil Soup is a hearty, flavorful dish combining savory sausage, protein-rich lentils, and wholesome vegetables in a comforting broth. Perfect for warming up on chilly days and a satisfying, nutritious meal.

Ingredients

1 lb Italian sausage (mild or spicy), casing removed
1 cup dried brown or green lentils, rinsed
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
6 cups chicken or vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 cups fresh spinach or kale (optional)

Instructions

  1. In a large pot or Dutch oven, cook sausage over medium heat, breaking it up until browned and cooked through. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in lentils, diced tomatoes, broth, thyme, oregano, smoked paprika, salt, and pepper.
  5. Return sausage to the pot and bring mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
  7. If using, stir in spinach or kale during the last 5 minutes of cooking until wilted.
  8. Adjust seasoning to taste before serving.
