A quick and hearty one-pan meal made with smoked sausage, colorful vegetables, and Italian seasoning. Perfect for busy weeknights and easy to customize based on what you have on hand.

Ingredients

  • 12 oz smoked sausage (such as kielbasa or andouille), sliced
  • 2 bell peppers (red, yellow, or green), chopped
  • 1 medium zucchini or yellow squash, sliced
  • 1 medium red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Optional: 1 cup cherry tomatoes or 1 cup sliced mushrooms

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and cook until browned, about 5–7 minutes. Remove sausage and set aside.
  3. Add remaining olive oil if needed, then sauté garlic and red onion for 2–3 minutes until fragrant.
  4. Add bell peppers, zucchini, and any optional vegetables you’re using.
  5. Season with Italian seasoning, salt, and pepper.
  6. Cook vegetables for 7–10 minutes or until tender-crisp.
  7. Return sausage to the skillet and stir to combine. Cook for another 2–3 minutes until heated through.
  8. Taste and adjust seasoning if needed.
  9. Serve hot, optionally garnished with fresh herbs.

Notes

  • Use turkey or chicken sausage for a leaner option.
  • Add cooked potatoes or sweet potatoes for a heartier meal.
  • Stir in spinach or kale at the end for extra greens.
  • Spice it up with crushed red pepper flakes or hot sauce.
  • Top with shredded cheese before serving for added richness.
  • Serve over rice, quinoa, or cauliflower rice for a more filling dish.
