Salt and Pepper Broccoli is a crispy, flavorful dish where broccoli florets are lightly coated, stir-fried or roasted, and seasoned with garlic, chilies, and black pepper. A quick and delicious snack or side inspired by Chinese salt and pepper-style dishes.

Ingredients

  • 2 cups broccoli florets
  • 2 tbsp cornstarch (or rice flour)
  • Salt to taste
  • 1 tsp freshly ground black pepper (plus more to taste)
  • 2 cloves garlic, finely chopped
  • 1 green or red chili, thinly sliced (optional)
  • 2 tbsp spring onions or scallions, chopped
  • 23 tbsp oil (for stir-frying or shallow frying)
  • 1 tsp soy sauce (optional)

Instructions

  1. Wash and dry broccoli thoroughly. Cut into bite-sized florets.
  2. Toss broccoli with cornstarch, salt, and a pinch of black pepper until evenly coated.
  3. Heat oil in a large pan or wok over medium-high heat.
  4. Add broccoli and stir-fry or shallow fry for 5–7 minutes until crispy and bright green. Remove and set aside.
  5. In the same pan, add a little oil and sauté garlic, chili, and spring onions until fragrant (1–2 minutes).
  6. Return the broccoli to the pan and toss well.
  7. Season with more freshly ground black pepper and salt to taste. Add soy sauce if using and mix well.
  8. Serve hot as a snack or side dish.

Notes

  • Dry broccoli completely to help it crisp up.
  • Cook in batches if needed to avoid overcrowding the pan.
  • Use rice flour instead of cornstarch for extra crispiness.
  • Air-fry at 400°F (200°C) for 10–12 minutes as a healthier option.
  • Adjust chili to your spice preference or skip for a mild version.
