Salsa fresca chicken is a light and flavorful dish featuring tender chicken topped with a fresh, zesty tomato and herb salsa. Quick to prepare, it’s perfect for weeknight dinners, tacos, or a healthy, vibrant meal.

Ingredients

  • 4 chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup cherry tomatoes or diced tomatoes
  • 1/4 cup red onion, diced
  • 1 jalapeño, minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. Season the chicken with salt and black pepper.
  3. Cook the chicken for 5–7 minutes per side, until fully cooked and golden brown. Remove from heat and set aside.
  4. In a bowl, combine tomatoes, red onion, jalapeño (if using), cilantro, and lime juice to make the salsa fresca.
  5. Spoon the salsa over the cooked chicken.
  6. Serve immediately with rice, tortillas, or a side salad.
