Ingredients

4 boneless, skinless chicken breasts

1 cup salsa fresca (homemade or store-bought)

1 cup shredded cheddar cheese

½ cup sour cream (optional, for serving)

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C).

  • In a small bowl, mix cumin, chili powder, garlic powder, salt, and pepper.

  • Rub the spice mix evenly over both sides of the chicken breasts.

  • Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes per side until lightly browned.

  • Remove the skillet from heat and pour salsa fresca over the chicken breasts, ensuring they are well-covered.

  • Sprinkle shredded cheddar cheese over the salsa-covered chicken.

  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

  • Optionally, serve with sour cream and fresh cilantro for extra flavor.

Notes

  • Add sautéed vegetables like bell peppers, onions, or zucchini to boost the nutrition of this dish.

  • For extra heat, incorporate sliced jalapeños or hot sauce into the salsa.

  • Swap cheddar for Monterey Jack, mozzarella, or pepper jack cheese for different flavor profiles.

  • If you prefer grilled chicken, grill the chicken before adding the salsa and cheese for a smoky flavor.
