Ingredients

  • 4 cups mixed salad greens
  • 1 large grapefruit, peeled and segmented
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the salad greens and place them in a large bowl.
  2. Peel the grapefruit and separate it into segments.
  3. Slice the avocado and cucumber.
  4. Thinly slice the red onion.
  5. Add the grapefruit segments, avocado, cucumber, and red onion to the bowl with the greens.
  6. In a small bowl, whisk together olive oil, lemon juice, honey or maple syrup, salt, and black pepper.
  7. Drizzle the dressing over the salad.
  8. Toss gently until all ingredients are lightly coated.
  9. Taste and adjust seasoning if needed.
  10. Serve immediately.

Notes

  • Crumbled feta or goat cheese can add a creamy contrast.
