Rotisserie Chicken Tacos are a quick and flavorful meal made with tender shredded chicken, warm tortillas, and fresh customizable toppings. Using store-bought rotisserie chicken keeps preparation simple while delivering juicy, seasoned tacos perfect for busy weeknights.

Ingredients

  • 3 cups rotisserie chicken, shredded
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lime juice
  • 810 corn tortillas or flour tortillas
  • Shredded lettuce, diced tomatoes, red onion, avocado or guacamole, sour cream or Greek yogurt, shredded cheese, fresh cilantro, and salsa (optional toppings)

Instructions

  1. Remove meat from rotisserie chicken and shred into bite-sized pieces.
  2. Heat olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in shredded chicken. Season with chili powder, cumin, paprika, salt, and black pepper.
  5. Squeeze in lime juice and stir well. Cook for 4–5 minutes until heated through.
  6. Warm tortillas in a dry skillet or microwave until soft.
  7. Spoon seasoned chicken into each tortilla.
  8. Add desired toppings and serve immediately.

Notes

  • Add diced jalapeños or hot sauce for extra heat.
  • Stir in a spoonful of salsa for added moisture.
  • Store leftover filling for up to 4 days in the refrigerator.
  • Freeze chicken filling for up to 2 months.
  • Use corn tortillas for a gluten-free option.
