Rotisserie Chicken Pasta Salad is a quick, flavorful, and versatile dish that combines tender rotisserie chicken, cooked pasta, fresh vegetables, and a tangy dressing. Perfect for potlucks, picnics, or easy weeknight meals, this salad is both satisfying and simple to prepare.

Ingredients

  1. 3 cups cooked pasta (such as rotini, penne, or bowtie)
    2 cups rotisserie chicken, shredded or diced
    1 cup cherry tomatoes, halved
    1/2 cup cucumber, diced
    1/4 cup red onion, finely chopped
    1/2 cup black olives, sliced
    1/2 cup shredded mozzarella or feta cheese
    1/4 cup fresh parsley or basil, chopped
    For the Dressing:
    1/3 cup olive oil
    2 tablespoons red wine vinegar or lemon juice
    1 tablespoon Dijon mustard
    1 teaspoon honey or maple syrup
    1 teaspoon dried oregano
    Salt and freshly ground black pepper, to taste

Instructions

  1. Cook pasta according to package instructions. Drain, rinse with cold water, and drain again.
  2. In a large bowl, combine cooked pasta, rotisserie chicken, cherry tomatoes, cucumber, red onion, olives, cheese, and herbs.
  3. In a small bowl, whisk together olive oil, vinegar or lemon juice, Dijon mustard, honey, oregano, salt, and pepper.
  4. Pour dressing over the pasta salad and toss gently to coat all ingredients.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
