Rotisserie Chicken Noodle Soup is the perfect comforting dish that combines tender rotisserie chicken, hearty noodles, and a flavorful broth made with fresh vegetables and herbs, delivering warmth and satisfaction in every spoonful.

Ingredients

  1. 2 cups rotisserie chicken, shredded or cubed
    6 cups chicken broth
    1 cup carrots, diced
    1 cup celery, diced
    1 small onion, chopped
    2 cloves garlic, minced
    1 1/2 cups egg noodles (or any pasta of your choice)
    1 tablespoon olive oil
    1 teaspoon dried thyme
    1/2 teaspoon dried rosemary
    1/2 teaspoon ground black pepper
    Salt, to taste
    1 tablespoon fresh parsley, chopped (for garnish)

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables start to soften and the onions become translucent.

  1. Add the minced garlic, thyme, rosemary, and black pepper to the pot. Cook for another 1-2 minutes, stirring frequently, until the garlic is fragrant.
  2. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and add the shredded rotisserie chicken. Let the soup simmer for 10-15 minutes to allow the flavors to meld together.
  3. Add the egg noodles (or your choice of pasta) to the pot and cook according to the package instructions, usually around 8-10 minutes, until the noodles are tender.
  4. Taste the soup and add salt as needed. If you like a richer flavor, you can also add an extra splash of chicken broth.
  5. Once the noodles are cooked, remove the soup from the heat. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.

  1. Feel free to add more vegetables, such as peas, corn, or spinach, for added nutrition and flavor.
  2. If you like spice, add a pinch of red pepper flakes or a few dashes of hot sauce for a spicy twist.
