Juicy, oven-roasted chicken thighs marinated in olive oil, lemon, garlic, and Greek herbs for a flavorful, Mediterranean-inspired main dish.

Ingredients

  • 46 bone-in, skin-on chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1½ tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp red wine vinegar (optional)
  • Fresh parsley or dill (optional, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, and vinegar if using.
  2. Place chicken thighs in a large bowl or zip-top bag. Pour marinade over chicken and toss to coat. Marinate for at least 30 minutes or up to overnight.
  3. Preheat oven to 425°F (220°C). Line a baking sheet or roasting pan with foil or parchment paper.
  4. Remove chicken from marinade and place skin-side up on the prepared pan. Discard excess marinade.
  5. Roast for 35–45 minutes or until skin is golden and internal temperature reaches 165°F (74°C).
  6. Let chicken rest for 5 minutes. Garnish with parsley or dill and serve with lemon wedges.

  • Broil the last 2–3 minutes for extra crispy skin.
