Roasted Grapes Phyllo Cups are a delicious, elegant appetizer or dessert combining the sweetness of roasted grapes with the crispy texture of phyllo dough. Topped with honey, fresh herbs, and optional cheese, these bite-sized treats are a sophisticated and flavorful addition to any gathering.

Ingredients

  1. 2 cups red or green grapes, halved
  2. 1 tablespoon olive oil
  3. 1 tablespoon honey
  4. 1 teaspoon fresh thyme (or rosemary), finely chopped (optional)
  5. Salt and pepper, to taste
  6. 12 phyllo cups (store-bought or homemade)
  7. 2 tablespoons butter or olive oil, melted (for brushing phyllo dough)
  8. 2 tablespoons cream cheese or goat cheese (optional, for added creaminess)
  9. Fresh basil or mint leaves, for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread the halved grapes on the baking sheet and drizzle with olive oil, honey, and fresh thyme (if using). Season with salt and pepper. Toss the grapes to coat evenly, then roast for 15-20 minutes, until caramelized.

  1. While the grapes are roasting, brush each phyllo cup with melted butter or olive oil. If making your own cups, layer 2-3 sheets of phyllo dough, brushing each with butter, then mold them into muffin tin cups and bake at 350°F (175°C) for 10-12 minutes until golden and crispy.
  2. Once the grapes are roasted and the phyllo cups are ready, spoon a small amount of cream cheese or goat cheese into each cup, if desired. Top each cup with a few roasted grapes.
  3. Drizzle with extra honey or balsamic glaze (optional) and garnish with fresh basil or mint leaves. Serve immediately while the phyllo cups are still crispy.

Notes

  • For a sweeter version, add a sprinkle of cinnamon to the grapes before roasting.
  • For a savory twist, add ricotta or prosciutto inside the phyllo cups before topping with grapes.
  • Roasted pears, figs, or apples can be substituted for grapes for a seasonal variation.
