Crispy, flavorful, and protein-rich Roasted Chickpeas make a wholesome snack or crunchy topping for salads and bowls. Easy to customize with your favorite spices, they’re a healthy alternative to chips or nuts.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed (or 1 1/2 cups cooked chickpeas)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon seasoning of choice (paprika, garlic powder, cumin, chili powder, or cinnamon for sweet version)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and rinse chickpeas thoroughly, then pat dry with a clean towel to remove excess moisture.
  3. Spread chickpeas on a baking sheet lined with parchment paper.
  4. Drizzle with olive oil and toss to coat evenly.
  5. Roast for 25–30 minutes, shaking the pan halfway through, until golden brown and crispy.
  6. Remove from oven and toss with seasonings while still warm.
  7. Cool slightly before serving.

  • Dry chickpeas thoroughly before roasting for the crispiest texture.
