Roasted Broccoli Grilled Cheese is a comforting twist on the classic sandwich, combining crispy golden bread, melty cheese, and flavorful roasted broccoli. It’s the perfect way to sneak in veggies while enjoying a cozy, satisfying meal.

Ingredients

  • 2 cups fresh broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 slices bread (sourdough, white, or whole grain)
  • 2 tablespoons butter or mayonnaise (for spreading)
  • 1 1/2 cups shredded or sliced cheese (cheddar, mozzarella, or a blend)
  • 1/4 teaspoon garlic powder or red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes, until tender and slightly browned.
  2. Spread butter or mayonnaise on one side of each slice of bread.
  3. On the unbuttered side of two slices, layer cheese, roasted broccoli, and additional cheese if desired. Top with remaining bread slices, buttered side facing out.
  4. Heat a skillet over medium heat. Grill sandwiches for 3–4 minutes per side, pressing gently, until the bread is golden and cheese is melted.
  5. Slice and serve warm, optionally with soup or salad.

Notes

  • Use mayo instead of butter for a crispier crust.
  • Broccoli can be roasted ahead and stored for up to 4 days.
  • Mix up cheeses for extra flavor—cheddar and mozzarella are a great combo.
