Ricotta Pistachio Honey Bites are easy, no-bake treats made with creamy ricotta cheese, crunchy pistachios, and a drizzle of honey. Elegant yet simple, these bite-sized delights are perfect for entertaining or a light dessert.

Ingredients

  • 1 cup whole milk ricotta cheese
  • 1/2 cup shelled pistachios, finely chopped
  • 23 tablespoons honey (plus more for drizzling)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Optional: 1 teaspoon lemon or orange zest

Instructions

  1. In a small bowl, mix ricotta with a pinch of salt, vanilla extract, and citrus zest if using.
  2. Using a spoon or small cookie scoop, form 1-tablespoon portions and roll into balls.
  3. Roll each ball in chopped pistachios until fully coated.
  4. Arrange on a serving plate and drizzle lightly with honey.
  5. Chill for 10–15 minutes if desired, or serve immediately.

Notes

  • Strain ricotta through cheesecloth if too watery for easier shaping.
  • Add a small amount of honey to the ricotta mixture for more sweetness inside.
  • Try with mascarpone or cream cheese for a variation in flavor and texture.
  • Best served chilled or at room temperature. Do not freeze.
