Ingredients
1 sheet puff pastry, thawed if frozen
1 cup ricotta cheese
1 cup fresh spinach (sautéed and chopped) or 3/4 cup frozen spinach (thawed and well-drained)
1 garlic clove, minced
1/4 cup grated Parmesan cheese
1 large egg (beaten, divided for filling and egg wash)
Salt and black pepper, to taste
1/8 tsp ground nutmeg (optional)
1 tsp olive oil or butter (for sautéing if using fresh spinach)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
If using fresh spinach, sauté with olive oil and garlic until wilted. Chop and drain excess moisture. If using frozen, thaw, chop, and squeeze dry.
In a bowl, mix ricotta, spinach, Parmesan, nutmeg (if using), salt, pepper, and half the beaten egg.
Roll out puff pastry and cut into 2×2 inch squares.
Add a spoonful of filling to the center of each square.
Fold or pinch corners to form a bundle, or leave open-faced like mini tarts.
Brush tops with remaining beaten egg.
Bake for 15–18 minutes until puffed and golden.
Cool slightly and serve warm or at room temperature.
Notes
Drain spinach well to avoid soggy pastry.
Can be assembled ahead and baked before serving.
Try other greens like kale or chard for variation.
Serve with marinara or garlic dip for extra flavor.
