Rich and Creamy Cajun Smothered Chicken is a bold and comforting Southern-style dish featuring tender seared chicken in a spicy Cajun cream gravy. This one-pan meal is perfect served over rice, mashed potatoes, or pasta for an indulgent, flavor-packed dinner.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil or butter
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 ounces cream cheese or 1/4 cup sour cream (optional)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Fresh parsley or green onions, for garnish

Instructions

  1. Pat chicken dry and season with Cajun seasoning, salt, pepper, and paprika on both sides.
  2. Heat olive oil or butter in a large skillet over medium-high heat.
  3. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, reduce heat to medium and sauté onions until soft and golden.
  5. Add minced garlic and cook 30 seconds more.
  6. Optional: Sprinkle flour over the mixture and cook for 1 minute to thicken.
  7. Slowly pour in chicken broth while stirring, scraping up any browned bits from the bottom.
  8. Stir in heavy cream and cream cheese or sour cream until smooth.
  9. Return chicken to the skillet, spoon sauce over the top, and simmer 5–7 minutes until heated through.
  10. Garnish with chopped parsley or green onions and serve hot.

Notes

  • Use half-and-half for a lighter version of the sauce.
  • Add bell peppers, mushrooms, or spinach for extra veggies.
  • Adjust spice level by reducing or increasing Cajun seasoning.
