Reuben Quesadillas are a crispy, cheesy twist on the classic Reuben sandwich, featuring corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing grilled inside a golden tortilla. This quick and easy recipe is perfect for lunch, dinner, or a fun snack!

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked corned beef, thinly sliced or chopped
  • 1 cup Swiss cheese, shredded or sliced
  • ½ cup sauerkraut, drained and patted dry
  • 2 tablespoons Thousand Island dressing
  • 1 tablespoon butter or cooking spray

Instructions

  1. Preheat the Pan – Heat a large skillet or griddle over medium heat.
  2. Assemble the Quesadilla – Spread Thousand Island dressing on one side of a tortilla. On half of the tortilla, layer Swiss cheese, corned beef, and sauerkraut, then fold it in half.
  3. Cook Until Crispy – Lightly butter the skillet and place the quesadilla in the pan. Cook for 2-3 minutes per side until golden brown and the cheese is melted.
  4. Slice and Serve – Remove from the pan, let cool slightly, then cut into wedges. Serve with extra Thousand Island dressing for dipping.
