Reuben Pizza is a creative and delicious twist on the classic Reuben sandwich, featuring crispy pizza crust topped with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing. This easy-to-make pizza is perfect for St. Patrick’s Day, game nights, or a unique dinner idea!

Ingredients

  • 1 pre-made pizza dough (or homemade)
  • ½ cup Thousand Island dressing (or Russian dressing)
  • 1 ½ cups shredded Swiss cheese (or mix with mozzarella)
  • 1 cup cooked corned beef, chopped or shredded
  • ½ cup sauerkraut, drained and patted dry
  • ½ teaspoon caraway seeds (optional, for a rye bread flavor)
  • 1 tablespoon olive oil (for brushing the crust)

Instructions

  • Preheat the Oven – Set to 425°F (220°C) and place a pizza stone or baking sheet inside to heat.
  • Prepare the Dough – Roll out the pizza dough on a floured surface. Transfer to a parchment-lined baking sheet or hot pizza stone.
  • Add the Sauce – Spread a thin layer of Thousand Island dressing over the dough.
  • Layer the Toppings – Sprinkle shredded Swiss cheese, followed by corned beef, sauerkraut, and a light sprinkle of caraway seeds if using.
  • Bake – Bake for 12-15 minutes or until the crust is golden and the cheese is melted.
  • Serve – Drizzle with extra Thousand Island dressing, slice, and enjoy!
