Ingredients

  • For the Chicken:
  • 1 ½ lbs chicken pieces (breasts, thighs, or tenders)
  • 2 cups buttermilk
  • 1 tbsp hot sauce (optional)
  • 2 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable or canola oil, for frying
  • For the Red Velvet Waffles:
  • 2 cups all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ cup granulated sugar
  • 1 ½ cups buttermilk
  • 2 large eggs
  • ¼ cup melted butter or oil
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • For the Cream Cheese Glaze (optional):
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • ½ tsp vanilla extract

Instructions

  1. In a bowl, combine buttermilk and hot sauce. Add chicken pieces, cover, and marinate in the refrigerator for at least 2 hours or overnight.
  2. In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper. Dredge chicken in the seasoned flour, shaking off excess.
  3. Heat oil in a deep skillet to 350°F (175°C). Fry chicken for 6–8 minutes per side until golden brown and cooked through. Drain on paper towels.
  4. For waffles: whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar in a large bowl.
  5. In another bowl, whisk buttermilk, eggs, melted butter, red food coloring, vanilla, and vinegar. Combine wet and dry ingredients until smooth.
  6. Preheat and grease the waffle iron. Pour in batter and cook according to manufacturer’s instructions until crisp and fluffy. Keep warm in a low oven.
  7. For glaze: beat cream cheese until smooth, then add powdered sugar, milk, and vanilla until pourable.
  8. Assemble by placing a piece of fried chicken on top of a waffle. Drizzle with maple syrup or cream cheese glaze. Serve hot.
