Ingredients

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, pureed

For the Cream Cheese Frosting:

  • 16 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Prepare the Strawberry Cheesecake:

    • Preheat oven to 325°F (163°C). Line a round cake pan with parchment paper.
    • Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and strawberry puree.
    • Pour batter into the pan and bake for 35-40 minutes until set. Cool completely, then refrigerate for at least 4 hours.
  2. Make the Red Velvet Cake:

    • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
    • In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla, buttermilk, vinegar, and red food coloring.
    • Gradually add dry ingredients, mixing until smooth.
    • Divide batter evenly between pans and bake for 30-35 minutes. Let cool completely.
  3. Prepare the Cream Cheese Frosting:

    • Beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla, beating until smooth.
  4. Assemble the Cake:

    • Gently place the chilled strawberry cheesecake layer on top.
    • Add the second red velvet cake layer.
